Marcel Lapierre spearheaded the movement in Beaujolais to return to the regions' traditional methods of winemaking, using only old vines, practicing all organic farming, little to no addition of sulfites or chaptalization, rigorous selection of the healthiest grapes, and fermentation in used oak barrels. After
